Find Your Pleasure in Dengke Mas Na Nuira




Each area would have its typical dishes, no exception for Northern Sumatra. If you have a plan to go there do not forget to taste its unique cuisine. One of them is Dengke Mas Na Niura. The food is usually served during the traditional events, wedding, or just a family gathering. But what makes this dish special? 

A long time ago, this dish was only served for kings. Therefore, not everyone was allowed to cook this cuisine, except for the royal chef. However, because the cuisine was tasty and popular in the community, later, it could be consumed by people and become Batak unique cuisine.

Dengke Mas Na Niura or uncooked carp fish is almost similar to sushi, a Japanese cuisine. The different is dengke mas na niura is served with variety of typical Batak spices. It is fairly easy to cook it. Clean the carp’s scales, halved the fish, and then wash it cleanly. Do not forget to remove all the fish bone. After that, salted and pickled the fish with the juice of jeruk jungga. Some people called it utte jungga or asam jungga. It looks like lime with the taste is similar to lemon. The aroma is also more fragrant than lemon. Due to the high acidity levels, Batak tribe is often used it in cooking Na niura.

The raw carp fish is covered with asam jungga and leave it for 3 hours until cooked. Marinate raw fish with acid will chemically eliminate the fishy smell and make it ready to be served. Other seasoning of na niura are almost the same with other dishes such as baked candle nut, garlic, onion, pepper, ginger, turmeric, and chili. All spices pounded and applied to the surface of the fish then leave it for about 1 hour so the fermentation process runs properly. 

The process allows developing lactic acid bacteria such as Lactobacillus and Bifid bacterium which are also a source of probiotics, good and helpful bacteria that make you healthy especially for your disgetive system. Evidently, it is not only having delicious taste but it also very beneficial for the body. No wonder with its soft texture, delicious and savory taste makes this cuisine become a featured product of Batak.
